Attractive large dark green endive with finely cut lacy leaves and delicately crispy ribs. Many people assume endives are very bitter but these have a mild nutty flavour. Any bitterness can be removed by blanching - tie up the leaves to exclude sunlight, and by keeping the plants well watered. Endives form large plants - great bulk for salads, and leaves can be harvested gradually form the outer edge if required. They are rich in vitamins and minerals, especially folate and vitamins A and K, and high in fibre. As well as being used in salads, endive leaves are great in soups. Space plants 50cm apart.
