How dull would our cuisine be without culinary herbs! And sometimes how hard to digest too! It’s hard to place herbs in a category that is culinary rather than medicinal, as so many are both, but the focus here is on those herbs which we regularly turn to in order to infuse flavour into a certain dish or to give it that quintessential flavour, be it French, Asian or Greek.
