Filipendula ulmaria

Perennial herb of damp meadows with airy clusters of creamy flowers. The aromatic leaves and flowers were formerly used as a strewing herb, including in churches for weddings and festivals. The flowers can be used to flavour fruit, jams, wine, mead, beer and vinegar, and impart an almond-like flavour. The herb also has many medicinal uses. A compound similar to aspirin is present in the roots, which can be chewed, for example, to relieve headaches. The roots also yield a black dye. The plant grows up to 2m in height when in flower – mid-summer to early autumn. Prefers full sun or part shade and a moist situation.
