Mertensia maritima ssp. asiatica
Also known as Oysterplant or Sea Bluebells, this coastal plant of the North Atlantic has leaves which taste like oysters and can be used raw or cooked. So you’ve heard of lots of plants which are supposed to taste of this or that but this one is astonishing – everyone who tries it says ‘OYSTERS!’ It belongs to the borage family and also has edible flowers. It is a ground hugging plant with fleshy blue-grey leaves, which sends out horizontal stems of up to 50cm with clusters of flowers at the tip – appearing red to start then turning blue. Suited to poor soils especially gravel, in full sun. Wind, drought and frost hardy. 9 cm pot, certified organic plant.
