Savory has a tangy, marjoram-like flavour and is the herb for cooking with beans. Winter savory is a small growing, perennial variety, with the strongest flavour. It is also a very useful medicinal plant with digestive, antiseptic and anti-nausea properties. It is reputedly good for bronchial and menstrual disorders, and can also be rubbed on bee and wasp stings. It makes an attractive low bush for borders, e.g. around a herb garden, and forms good ground cover if planted approx 30cm apart. Said to be a good companion for the vege garden, warding off pests and attracting bees. Prefers a hot, dry spot, poor soil, and is drought tolerant. Will not tolerate wet feet in winter.
