Clary Sage

Salvia sclarea

This aromatic biennial or short-lived perennial herbaceous shrub grows up to 90cm high. The name ‘clary’ comes from ‘clear-eye’, as seeds soaked in cold water form a mucilage which may be used to remove particles from the eyes.  An essential oil is widely used in aromatherapy for relieving anxiety and menstrual problems. The aromatic leaves can be used to flavour soups and stews and were traditionally used to give a muscatel flavour to wine.  They can also be dipped in batter and fried like tempura.  The flowers can be used to decorate salads. Clary sage is easy to grow in a sunny spot and lovely to plant where you brush against it, releasing the strong sage scent.  The flowers are attractive to bees.  Cut back after flowering.  Grows to 90cm.
